Recipe
Baba Ganoush (Eggplant Spread)
- 2 eggplants
- 3 garlic cloves
- 2 tablespoons lemon juice
- 1⁄4 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1 teaspoon pepper
- 1⁄4 cup tahini
- 1⁄2 teaspoon Orgánica Superfoods sumac
- A dash of extra virgin olive oil
- 1⁄2 tablespoon vegan yogurt
- Wash the eggplants, pierce them with a fork, and roast them in the oven for 20 minutes at 180°C. Remove from the oven and let cool.
- Carefully peel the eggplants, chop them, and mash them with a fork. Set aside.
- Mix the other ingredients until you achieve a homogeneous consistency.
- Finally, combine the eggplant mixture with the other ingredients, integrating well without blending.
- Serve in a bowl and garnish with a drizzle of olive oil and a sprinkle of sumac.
