Recipe Idea: Vegan Muffins
- 1 cup almonds
- 1 cup Orgánica Superfoods dates
- ¼ cup chopped hazelnuts
- 2 tablespoons Orgánica Superfoods Power Mix
- Shredded coconut
- ½ cup almond flour
- 2 tablespoons Orgánica Superfoods whole grain rice protein
- 1 teaspoon Orgánica Superfoods cinnamon
- 1 teaspoon baking soda
- ½ cup peanut or hazelnut butter
- ½ cup mashed ripe banana
- ½ cup coconut oil
- Preheat the oven to 180ºC.
- In a bowl, combine the wet ingredients: mashed banana, peanut or hazelnut butter, and melted coconut oil (melted in a double boiler). Mix well and set aside.
- In another bowl, add all the dry ingredients and mix until there are no lumps. Gradually pour the dry mixture into the wet mixture, stirring until homogeneous.
- Grease the muffin tin with coconut oil and pour in the mixture.
- Bake for 10-15 minutes.
- Remove and let cool for a few minutes before unmolding.
- Allow to cool completely on a rack before consuming. Enjoy your delicious and nutritious vegan muffins!
